I never did think much of self serve buffet for restaurants. Self serve beverage may be all right.
I have been in self serve and seen how patrons especially young children handle the food in the self serve area.
Self serve places may need to convert to cafeteria style where an employee loads you tray with your selection.

Aye, appears it's curtains for buffets in Las Vegas;just wonder when they start re-filling up all the hotels with tourist bus loads and trade shows again at the convention centers - where are the visiting thousands going to eat cheap (relatively speaking).
