The other lady that did this same dish, had on all Jewelry, lol.
We just finished a big pot of that, it's one of our favorites.
I'm not familiar with that particular recipe but I'm going to check it out.
We discovered that dish in a Jamaican Restaurant down in Maryville TN and loved it so I went online and got a general sense of what goes in it and came up with my own recipe and it is GOOD!
If you ever get a chance to go to a Jamaican Restaurant do it! It's my favorite ethnic food now but we don't get it much cuz it's so far away. In fact, we were down there a couple days ago and they were out of my 3 favorites, Oxtail Stew, Curry Goat and Ribs. My mouth is watering just thinking about it.
My mother loved Oxtail soup, lol, I would cook it for her, but, I would not eat it, lmaoooooooooo.
I was in the store one day, and I was looking at it to buy some, and this man walked up to me and said, "that's some good eating"! I said, yeah, then I thought about it, and said, 'Ox tail", lmaooooooooooo, then I walked away from it, and never cooked it again, lol, I did the same thing with liver, lol.
It only cost me $20.00 . I bought all the ingredients last night, made some last night with sweet potatoes, and today with corn. I used beef polish! It's good, I need some cornbread, and some more spices, lol, today with the corn, I added crushed red pepper, lol, the yellow and red peppers, not that much though, just a little bit, lol. What do you add? I always use a little apple cider vinegar because, cabbage and greens smell bad when they are cooking, lol, a little vinegar helps, lol, and I was thinking, Balsamic salad dressing maybe? lmaoooooooooo, I dunno. Enjoy!
I was never that much into all kinds of spices and seasonings either but if you use some of the stuff they recommend it really makes a big difference in the fried cabbage.
Here's what I put in mine the other day:
1 large cabbage chopped
1 small bag shredded carrots
1 large onion sliced and halved
1 bunch green onions chopped
1 yellow pepper sliced
1 green pepper sliced
1 red pepper sliced
3 garlic cloves smashed
3 Tbs butter
3 Tbs oil (I used avocado oil)
2 tsp Vegeeta seasoning (Amazon has it)
1 tsp ground thyme
1 tsp black pepper
Salt to taste
Sautee the peppers and onions and carrots and garlic in the butter and oil in a heavy dutch oven until they soften up a little bit and then throw everything else on top and cover and cook over medium heat for an hour to an hour and 15 minutes stirring every 15 minutes or so. Man, my mouth is waterin' again!
We tried it with kielbasa one time and with cooked chopped bacon one time and we liked it with the bacon better but I think we like it by itself the best. I'm on a low carb diet so I can't do the sweet potatoes and corn and all that but I wish I could!
