A good math (statistics) book will show you how to do these things, as well as teach you all the fancy terms, too.
It will show you whether a set of numbers, or the game overall, follows a "normal" distribution or not.
As far as "trending", with a bit of programming, you could determine that by a moving data set. e.g. 500 draws: study drawings 1-100, 2-101, ... 400-499, 401-500.
This is a total of 401 samples, each of sample size 100 drawings. Look at the resulting data (or graphs) like frames of a motion picture. See if there is any "motion".
