It depends on your definition of "use". We do use 100% of our brains, but we don't necessarily use 100% to think with. There's a lot of connective tissue, fatty tissue, blood vessels and blood, cushioning fluid, nerve sheaths, etc. that aren't specifically used for thinking. It may be that the neurons only make up 10% of our brains.
