Did you know that Armenians do not like anything to do with Turkey? Some will not eat the meat.

Well I am not one of them. I love turkey and all the trimmings. Do you eat turkey? So before people come out of the woodwork, this is not a racist statement, but I like white meat.

I did not know that, music. I was at the liquor store one day to buy my lottery tickets and when I walked in, the clerk was talking to a swarthy looking guy, a truck driver. She brightened up when she saw me, told the man "This guy can help you, I bet."   In heavily accented English, he told me he needed directions to a carbon black plant just outside of town. I told him it was just up the same direction about three miles on the same hwy. and then I asked him if he was Greek b/c it sounded like that accent. His face darkened and he pounded his chest. "NO! Am Turk!" Shrugging, I apologized, knowing the enmity those two countries had for each other.

I decided that it probably wasn't a good idea to tell him that I had heard that on Turkish buses that the sign "Walk to the driver's rear." was literal.

I think most people do like white meat, lejardin, but I'm a fan of the dark meat. To me, it's more flavorful and moist...and THAT sounded not just racial but a little sexual, too, huh? <grin> The problem is that the time the dark meat is done, the white meat has been cooked too long and to too high a temp.

That's why I prefer to spatchc*ck a turkey or chicken. (had to obfuscate that word because the filters think it's a naughty word instead of a way to cook poultry.)

Omg too funny. Yea, I suppose you are right again not only racist but sexual hahahahahahaha. And you are right about the cooking time, there is not a lot of leeway in cooking time in order to make the white meat cooked and juicy.

Just for the record I like white meat too and the way I cook my turkey it is always very moist...I baste it a lot after having rubbed a lot of butter beneath the skin & cook it on low heat or in a crock pot.

...most of the time I just cook a turkey breast!...oh no here we go again!....lol

I watch a LOT of cooking/recipe videos and see people now making a triangle out of a couple layers of foil and covering the breast for the first hour or so of cooking.

I also think the best way to keep the meat moist is to brine it overnight or at least for a few hours before cooking. I've never done it for a turkey, but it works great on chicken.

I would really like to deep fry a turkey; my nephews do it and my big sister says it's delicious.   I've watched videos of people doing it...and seen videos where they caught their house or back yards on fire, too.

Yep, Vergie...butter makes nearly everything better, just like a pinch of cayenne

Deep fry is the way to go with cajun spices.

That's what a lot of cooks on the 'net say, Bob.

I read an article the other day about the Texas State Fair and how they deep fry all kinds of stuff in the midway food booths. The writer must have been from NYC b/c he was shocked. Sheesh, they deep fry ice cream, so I dunno what's left after that, maybe deep frying a stick of butter? Paula Dean would be on board w/ that, I reckon.
