Corn Chowder with Sweet Peppers


Ingredients:

1 tablespoon snipped fresh parsley (optional)
1 cup chopped onion
1 12-ounce can evaporated skim milk
1 12-ounce can whole kernel corn with sweet peppers
1/8 teaspoon pepper
1 14-ounce can chicken broth
1/4 cup all-purpose flour

Steps:
1. In a medium saucepan combine broth, onion, and pepper. Bring to boiling; reduce heat. Cover and simmer for 5 minutes or until onion is tender.

2. In a small bowl stir together milk and flour. Stir into broth mixture. Cook and stir until thickened and bubbly. Stir in corn. Heat through. If desired, sprinkle with parsley. Makes 6 side-dish servings.

You use this as a side dish? We would eat that as the main meal, when I was growing up.

If I am having alot of people over and serving alot of food items,I do use it as a side dish
If it is just my family then it is the main dish

Interesting comments. So I guess my family wasn't alone in occasionally having soup for the main entree. We'd also have corn chowder & sometimes it was pea soup with carrots with challah for a meal. But every single, solitary, bloody, freakin' Friday night we'd have chicken soup (with carrots, celery, onions) with boiled chicken. I will never eat boiled chicken as long as I live. :-)

I feel that way about beans, Justx.   It was 15 in my family and we always had beans when the money got funny for food. (Got 12 other siblings) Not the Great Northern beans but those little white beans. I hate beans! The only beans I eat now are green beans or Cuban black beans and they have to be from a fine Cuban restaurant.

Boiling chicken dries out the meat. Never ever boil chicken. Roast it instead and always remember to let it sit before cutting into it, to allow the juices to re-distribute throughout the meat. I just cooked a sirloin meatloaf tonight. Yum yum...lol
