People have been known to survive on Potatoes for months and Water of course, so if you don't eat anything else, eat Potatoes and drink Water.
If I was you I would also eat Tomatoes, as some people might survive for months or even for one year on Potatoes, Tomatoes and Water.

Incidentally, if you were morbidly obese, and you were given the exact micronutrieints you need (not just vitamins, but also including essential oils and minerals) - and no potatoes, you might live a year. There are medical studies of obese people going on a starvation diet, with only micronutrients, living healthy lives for quite long time periods. I believe at least one case was a year or longer.

I made a list of foods that I think that a person would live well enough on and nothing else, but it is just what I think and I might be wrong:

By the way, something that some people don't know is that there is not too much of a difference between Vitamins and Minerals for Women and for Men, they don't have Hormones in them.
So Women can take Men's Vitamins and Minerals
And
Men can take Women's Vitamins and Minerals.
After all, Vitamins are just Vitamins and Minerals are just Minerals.
There is NO Female Calcium NOR Male Calcium NOR Female Vitamin C NOR Male Vitamin C.
If they had Hormones for Females or Hormones for Males then you could not, but they don't have Hormones.
Of course, you don't need a Multi-Vitamins-Minerals even if it is Natural from Food Sources such as those if your food provides them.
