Beer can chicken

Ingredients----
1/3 cup brown sugar 2 tablespoons chili powder 2 tablespoons paprika 2 teaspoons dry mustard 1/2 teaspoon salt 1/4 teaspoon ground black pepper 1/2 (12 fluid ounce) can beer 1 (3 pound) whole chicken
Directions---
Preheat an outdoor grill for medium-high heat, about 375 degrees F (190 degrees C). Mix the brown sugar, chili powder, paprika, dry mustard, salt, and ground black pepper in a small bowl. Place the half-full can of beer in the center of a plate.
Rinse chicken under cold running water. Discard giblets and neck from chicken; drain and pat dry. Fit whole chicken over the can of beer with the legs on the bottom; keep upright. Sprinkle 1 teaspoon of the seasoning mix into the top cavity of the chicken. The beer may foam up when the seasonings fall inside the can. Rub the remaining seasoning mix over the entire surface of the chicken.
Place the chicken, standing on the can, directly on the preheated grill. Close the lid and barbeque the chicken until no longer pink at the bone and the juices run clear, about 1 hour 15 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chicken from the grill and discard the beer can. Cover the chicken with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

1/3 cup a-1 -- (r) steak sauce
2 teaspoons grated lemon peel
1 clove garlic -- minced
1/4 teaspoon black pepper -- coarsely ground
4 beef -- (4-6 oz) shell or

Instructions:
In small bowl, combine steak sauce, lemon peel, garlic and pepper; brush on both sides of steaks. Grill steaks over Medium heat for 15 minutes on each side or until done, brushing with sauce occasionally

1 teaspoon of white wine vinegar or 1 1/2 teaspoons of dry white wine
1/2 teaspoon of Worcestershire sauce
Salt and pepper
Directions**
Combine mayonnaise, sour cream, shallots, dill, lemon zest, lemon juice, white wine vinegar, and Worcestershire sauce in a bowl. Fold in the crab meat. Salt and pepper to taste. Chill for 2 hours or overnight.

-Modify your workstation. Adjust your workstation and chair to the correct height.
Use proper lighting.

-Match the computer screen to the brightness of the environment. The contrast between the background and on-screen characters should be high.

-Minimise the glare. Use window shades, blinds or drapes to block excessive sunlight or install an anti-glare screen to minimise reflections.

-Take frequent breaks. Full-time computer users should take a 10 minute break every hour.

-Blink more often. Tears in the eye evaporate more rapidly during long non-blinking phases and cause dry eyes.

-Get an eye examination done.

-Re-focus your eyes. Look away from your computer screen every 10-15 minutes and focus for 5-10 seconds on a distant object.

-Exercise even when sitting. Move about or exercise frequently.

-Get sufficient sleep. Fatigue promotes eyestrain

Grilled turkey burger

Ingredients
1 pound ground turkey breast
1/4 cup dried bread crumbs
1/4 cup chopped onion
2 tablespoons fresh parsley, chopped
1 1/2 tablespoons Worcestershire sauce
1 teaspoon Tabasco (hot) sauce
4 whole-grain buns
4 slices tomato
4 slices red onion
2 bibb lettuce leaves, halved
4 tablespoons ketchup

Directions
Combine the ground turkey breast, bread crumbs, chopped onion, parsley, Worcestershire sauce and hot sauce in a large bowl. Mix well. Divide turkey mixture into 4 equal portions and form into patties.

Prepare a hot fire in a charcoal grill or heat a gas grill or broiler (grill). Away from the heat source, lightly coat the grill rack or broiler pan with cooking spray.
Grill burgers until nicely browned on both sides and heated through, about 7 minutes a side.  Serve each burger on a bun topped with 1 tomato slice, 1 onion slice, 1/2 lettuce leaf and a dollop of ketchup.

LOS ANGELES � As oil continues to pour into the Gulf of Mexico, Victoria Principal has stepped up with a $200,000 donation to help clean things up.

Oceana and the Natural Resources Defense Council say the actress made the donation to encourage the two nonprofits to work together to address the damage along the Gulf Coast and support a shift toward renewable energy.

The former "Dallas" star is among a handful of celebrities who have become involved with the cleanup efforts. Ted Danson, who serves on Oceana's board of directors, is an outspoken critic of offshore drilling. Director James Cameron met with officials to share his expertise on underwater filming and remote vehicle technologies. And Kevin Costner has invested more than $24 million to develop devices now under consideration to help clean up the spill

In observation of the National Moment of Remembrance, Mountain Home Mayor David Osmon asks citizens to pause at 3 p.m. today to reflect on those who have sacrificed for our freedoms.

Osmon signed a proclamation to remember America's fallen and to make a commitment to give something back to our country in their memory.

Osmon said the goal is to put "memorial" back in Memorial Day, as a Gallup poll revealed that only 28 percent of Americans know the meaning of the holiday.

What do people do?
It is traditional to fly the flag of the United States at half mast from dawn until noon. Many people visit cemeteries and memorials to honor everyone, who has died, and those, who have died in military service, in particular. Many volunteers place an American flag on each grave in national cemeteries. Memorial Day is combined with Jefferson Davis' Birthday in Mississippi.

Memorial Day has become less of an occasion of remembrance. Many people choose to hold picnics, sports events and family gatherings on this weekend. This day is traditionally seen as the start of the summer season for cultural events. For the fashion conscious, it is seen as acceptable to wear white clothing, particularly shoes from Memorial Day until Labor Day.

Picnic Cole Slaw

PICNIC COLE SLAW   

1/2 head cabbage, shredded
2 cups water
2 tbsp. salt
2 medium (not baby) carrots, thinly shredded
2 shallots, finely chopped
3 tbsp. apple cider vinegar
2 tbsp. sugar
1/4 cup sour cream

1/4 tsp. celery seed

salt and coarsely cracked black pepper

Combine water and salt to make a brine. Soak shredded cabbage, then rinse in cold water; drain well in colander.
Combine remaining ingredients to make dressing and toss the cabbage to coat well. Taste and adjust seasonings, adding salt and pepper, if needed.

Refrigerate in a tightly closed plastic container for several hours, turning several times to keep the cabbage coated with dressing

Campfire banana splits

Ingredients
6 large bananas, unpeeled, stems removed 2 cups semisweet chocolate chips 1 (10.5 ounce) package miniature marshmallows
Directions
Preheat the grill .
Spray 4 sheets of aluminum foil, large enough to wrap bananas, with cooking spray.
Slice the peel of the banana from stem to bottom, while slicing the banana inside lengthwise. The bananas can be cut into slices instead if you like, (while still in the peel) for easier handling later.
Carefully open the banana just wide enough to place the chocolate chips and marshmallows inside the peel with the banana. Stuff with as much of the chocolate chips and marshmallows as desired.
Wrap the bananas with the aluminum foil and place on the grill or directly in the coals of a fire. Leave in long enough to melt the chips and the marshmallows, about 5 minutes. Unwrap bananas, open the peels wide, and eat with a spoon

1 6 ounces c orange juice concentrate
thawed
1/2 cup A.1. Steak Sauce
1/4 cup dry sherry
1 clove garlic -- minced
2 beef club or strip -- (8-ounce)
steaks -- about 1-inch thick

Instructions:
In a small bowl, combine orange juice concentrate, steak sauce, sherry and garlic. Place steaks in glass dish; coat with 1/2 cup orange juice mixture. Cover; chill 1 hour, turning occasionally. In a small saucepan, over medium heat, heat remaining orange juice mixture; keep warm. Remove steaks from marinade. Grill over medium heat for 4 minutes on each side or until done, turning once. Serve steaks with reserved warm orange sauce
