Breakfast Burger

1 pound bulk pork sausage
1 teaspoon vegetable oil
4 large eggs
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
4 English muffins, split and toasted
1/4 cup shredded cheddar cheese
Gently form sausage meat into patties.
Place cast-iron skillet over high heat. Lightly coat with oil. Brown patties until browned on bottom. Flip and finish cooking until no longer pink. Keep warm in a 200°F (95*C) oven.
Wipe off pan, add a bit more oil if needed, and cook the eggs as desired. Season with salt and pepper to taste.
To serve, place sausage patties on muffin bottoms. Top each with egg and 1 tablespoon of cheese. Cover with muffin tops.
Makes 4 servings.

1 oz Pineapple juice
Top with Champagne
Crushed Ice
Mixing instructions:
Fill a tail shaker with ice. Add liquor and pineapple juice. Shake and serve in glass. Top with champagne.

Hot Cranberry Toddy



Ingredients:

1/4 cup lemon juice
3 1-inch-long strips lemon peel
3 inches stick cinnamon
Lemon peel strips (optional)
1/3 cup bourbon, rum, or orange juice
1/2 cup sugar
1 48-ounce bottle cranberry juice (6 cups)
2 cups water
1 teaspoon whole cloves

Steps:
1. Combine cranberry juice, sugar, lemon juice, and water in a 4-quart saucepan or Dutch oven.

2. For spice bag, tie lemon peel, cinnamon, and cloves in a 6-inch square of 100 percent cotton cheesecloth. Add spice bag to saucepan. Bring just to boiling; reduce heat. Simmer, covered, for 10 minutes. Discard spice bag. Add bourbon, rum, or orange juice.

3. Transfer to a heatproof serving carafe or pot. Serve with a lemon peel strip in each cup, if desired. Makes about 12 (6-ounce) servings.

4 cups all-purpose flour
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup butter, softened
2 cups firmly packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup sour cream
3 cups roasted cashews, chopped*
1 cup butter (no substitutions)
4 cups confectioners' sugar
6 tablespoons heavy or whipping cream
1/2 teaspoon vanilla extract
Whole cashews, for garnish
1-1/2 teaspoons baking powder


Nutritional Information:
calories: 100, total fat: 6g, saturated fat: 3g, cholesterol: 14mg, sodium: 92mg, carbohydrate: 12g, protein: 1g.

Steps:
1. Heat oven to 350 degree F. Grease 2 large cookie sheets. Combine flour, baking powder, baking soda, and salt in bowl. Beat 1 cup butter and the brown sugar in large bowl with electric mixer until light and fluffy. Beat in eggs and the 1 teaspoon vanilla. At low speed, beat in sour cream; beat in dry ingredients. Stir in chopped cashews.

2. Drop dough by rounded teaspoonfuls onto prepared cookie sheets. Bake 12 minutes or until lightly browned. Cool on wire racks. Repeat process with remaining dough.

3. Make Brown Butter Frosting: Melt 1 cup butter in saucepan over medium heat until lightly browned. Remove from heat. Whisk in confectioners' sugar, then cream, and the 1/2 teaspoon vanilla until smooth. Spread warm Brown Butter Frosting on cookies; garnish each with a whole cashew. Makes 9 dozen.

4. *Note: If using salted cashews, omit salt from dough.

5. Make-Ahead Tip: Prepare cookies. Freeze in airtight containers up to 1 month. Frost as directed

Thanksgiving Feasting

Garlic chicken pizza

Ingredients
1 1/8 cups warm water (110 degrees F/45 degrees C)
1 1/4 teaspoons salt
1 1/2 teaspoons vegetable oil
3 cups bread flour
2 tablespoons dry milk powder
2 teaspoons active dry yeast

2 tablespoons cornmeal
1 cup roasted garlic and parmesan cheese sauce
1/4 teaspoon granulated garlic
10 ounces mozzarella cheese, shredded
2 grilled skinless, boneless chicken breast, diced
1/4 red onion, sliced
1 tomato, cut into thin wedges
1 green bell pepper, seeded and diced
Directions
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
Preheat oven to 475 degrees F (245 degrees C). Sprinkle a large pizza pan with cornmeal. Roll or pat dough out on a lightly floured surface until it is the diameter of the pizza pan; place on pan.
Spread dough with sauce, then sprinkle with garlic. Cover with cheese. On top of the pizza, arrange chicken, green pepper, onion and tomato.
Bake in preheated oven for 20 to 25 minutes, or until dough is baked, cheese is melted and toppings are lightly browned.

Thanksgiving in a dish

INGREDIENTS
1 1/2 cups hot water
1/4 cup butter, cut into pieces
1 (6 ounce) package chicken flavored dry stuffing mix

3 tablespoons butter
1/2 cup chopped celery
1/2 cup chopped onion
3 cups diced, cooked turkey
1/2 teaspoon celery seed
1/4 teaspoon garlic powder
salt and pepper to taste
3 cups prepared mashed potatoes


DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13 inch baking dish.
In a large bowl, stir together the seasoning packet from the stuffing, hot water, and 1/4 cup butter until butter is melted. Stir in stuffing just until moistened. Let stand for 5 minutes.
Melt 3 tablespoons butter in a large skillet over medium heat. Add the celery and onion; cook and stir until tender. Mix in the cooked turkey, and season with celery seed, garlic powder, salt, and pepper.
Spread a layer of stuffing over the bottom of the prepared baking dish. Top with the turkey mixture, then spread a layer of mashed potatoes over everything. Cover with aluminum foil.
Bake for 15 to 20 minutes in the preheated oven, until heated through.

Bitten by an African green mamba, a 47-year-old man at Indianapolis' Methodist Hospital was having difficulty speaking and problems moving his eyes and legs.
Emergency room physician Mary Wermuth had no anti-venin to help the man, whose rare pet snake was among the world's deadliest. Wermuth immediately went to her computer and consulted the online Anti-venom Index to find the nearest source of an antidote.

"It was a couple of taps at the keyboard and we found it was at the local zoo," she said.

The member-controlled index went online in 2006, connecting hospitals with rare anti-venins. But now the program faces new challenges.

An influx of exotic snakes into the United States, coupled with a drugmaker's decision to stop making anti-venin for a snake found throughout the South, is putting pressure on toxicologists who try to prevent painful deaths by snake bite.

Ingredients

1 (9-inch) graham cracker pie crust

1 pint vanilla ice cream, softened

1 (8 ounce) container Cool Whip

8 ounces Whoppers candy or malted milk balls



Preparation

Combine softened ice cream and Cool Whip until well blended. Reserve 8 Whoppers for garnish.

Crush remaining Whoppers. Add 1 cup of crushed candy to ice cream mixture, reserving remaining 1/2 cup. ice cream mixture into pie crust. Top pie with reserved crushed candy and freeze for 4 hours.

Decorate edge of top crust with 8 Whoppers.

Ingredients

1 package (12 ounces) Snickers Popables chocolate candy pieces, chilled

1 roll (1 pound) chocolate chip cookie dough, at room temperature



Preparation

Preheat oven to 350 degrees F. Line a 9 x 13-inch baking pan with non-stick foil.

Cut cookie dough in half lengthwise. Oil your hands and use your fingers to gently press the dough into the bottom of the baking pan.

The layer will be thin. Evenly distribute the chocolate candy pieces on top of the dough and gently press them down so they don’t roll around.

Bake 15 to 20 minutes. Let cool about 20 minutes, then cut into bars while warm.

Cranberry sauce recipe

     1-1/2 C sugar
     1 navel orange
     1/2 t grated ginger
     4 C cranberries
     1/2 C (2 oz.) toasted pecans
     
     Grate the orange peel and add to a pot with the sugar and ginger.
     Add the juice from the orange into the pot and simmer over
     medium heat until the sugar is dissolved.
     Add cranberries and cook until they pop - about 5 minutes.
     Add pecans and cool sauce.
